Assistant Catering Cost Control & Revenue Manager

Job Summary

Reports to Manager, Catering Cost Control & Revenue Manager, the job holder serves as the key operational support to the Manager in overseeing all aspects of catering revenue management and cost control operations at Conghua Racecourse. This role is responsible for executing daily income reconciliation, cost analysis, and control procedures while supporting both routine operations and high-volume Raceday and events. The position requires strong analytical capabilities, attention to detail, and the ability to manage multiple priorities in a dynamic environment.

The working location of this position is Guangzhou (including Conghua District) and business travel based on business need.

Major Tasks

1.    Revenue Management & Control
1)    Execute daily revenue posting and reconciliation procedures under manager supervision, ensuring all catering revenues are accurately recorded in a timely manner
2)    Assist in coordinating Raceday cash operations by preparing cash floats, documenting cash movements, and supporting collection activities with Treasury Department
3)    Perform daily revenue reconciliation between POS systems, manual records, and finance postings, investigating and resolving discrepancies
4)    Maintain revenue control documentation and support regular procedure reviews to strengthen internal controls
5)    Prepare revenue reports and analysis under manager guidance, including daily sales summaries and variance reports
6)    Support revenue-related projects by participating in system testing, data validation, and process improvement initiatives
7)    Assist in monitoring labor efficiency metrics and workflow processes to identify improvement opportunities


2.    Cost Control & Analysis 
1)    Execute daily food and beverage cost control procedures including recipe costing updates, portion control monitoring, and waste tracking
2)    Support procurement activities by maintaining supplier price databases, tracking market price fluctuations, and assisting with purchase price comparisons
3)    Assist in menu costing activities by updating recipe cards, calculating ingredient costs, and providing cost data for pricing decisions
4)    Conduct regular inventory counts and stock takes under manager supervision, ensuring accurate recording and valuation
5)    Prepare daily and weekly cost analysis reports highlighting key trends, variances, and operational insights
6)    Support cross-departmental communication with kitchen and restaurant teams to gather cost information and implement control measures
7)    Assist in monthly cost report preparation by compiling data, calculating key metrics, and documenting variance explanations 
8)    Assist in monitoring labor efficiency metrics and workflow processes to identify improvement opportunities

3.    Raceday & Event Operations
1)    Provide hands-on support during Racedays and special events, assisting with cash operations setup and revenue collection procedures
2)    Monitor cash float distribution and collection across catering outlets during high-volume events
3)    Support enhanced control procedures during events by maintaining documentation and assisting with real-time monitoring
4)    Participate in post-event reconciliation activities by compiling transaction records and identifying discrepancies
5)    Assist in event-specific cost monitoring and provide real-time support for cost analysis requirements
6)    Coordinate with operations team to ensure adequate preparation and follow-up for all revenue and cost control activities

4.    Comply with all relevant laws and regulations in Mainland China under any circumstances. Follow and abide by the rules and regulations of the Club and the company.

5.    Complete other tasks arranged by the superior

Education

Degree holder in Finance, Accounting or relevant discipline

Experience

  • Degree holder in Finance or Accounting
  • Minimum 8 years’ experience in solid and relevant F&B experience
  • Experience in ERP system implementation is an advantage.
  • Ability to engage with multiple senior stakeholders in a complex operation and with close working relationship with Headquarters.
  • Demonstrated leadership capabilities.
