Chef de Partie - The Derby (Happy Valley Clubhouse)

Job Summary

The job holder is accountable for providing food of highest quality standards to Members and guests. The job holder is also responsible for the operational readiness of the culinary venues.

The Job

You will:

Check all parts of the kitchen, including pot and dish wash areas, for cleanliness, order, and correct storage and stock rotation.
Ensure adequate preparation for the next day, including sauces, stocks, and fish.
Check and control daily mis en place according to the supervisor.
Ensure smooth, prompt, and top-class service to guests.
Assist in making food requisitions in a timely manner.
Troubleshoot issues that may arise in the kitchen and report any unresolved problems to the supervisor.
Be responsible for basic on-the-job training, coaching, and development of cooks.
Be multi-skilled with thorough knowledge of all club food venues and menus.
Taste and examine food prepared, making necessary adjustments and replenishing food when necessary.
Be responsible for minimizing food wastage.
Anticipate guests' needs through observation and offer prompt, efficient service either personally or through effective communication with colleagues.
Follow the food safety program and ensure all associates have a working knowledge of the program.
Assist the supervisor in the performance of his/her duties.
Ensure compliance with all relevant Workplace Health and Safety and Occupational Health and Safety rules.
Align management style, working practices, and conduct with HKJC values and policies.
Undertake any additional duties as requested by the supervisor.

About You

You should have:

2 to 5 years' relevant experience gained in prestigious hotels or restaurants with 1 to 3 years in a similar position.

Terms of Employment

The level of appointment will be commensurate with qualification and experience.
