The Hong Kong Jockey Club

Founded in 1884, The Hong Kong Jockey Club (“the Club”) is a world-class racing club that acts continuously for the betterment of our society. The Club has a unique integrated business model, comprising racing and racecourse entertainment, a membership club, responsible sports wagering and lottery, and charities and community contribution. Through this model, the Club generates economic and social value for the community and supports the HKSAR Government in combatting illegal gambling.

The Department

Our Catering Department manages one of the largest and most diverse catering operations in Hong Kong. We provide a wide range of catering, sports and recreation facilities for Members and their guests in three Clubhouses. In addition, both Happy Valley and Sha Tin Racecourses have numerous catering facilities used by Members, non-members and corporate organizations for a variety of functions.

The Job

  • Ensure that the food services are delivered to exceed customer expectations and to meet hygiene standards. Monitor food production to achieve quality and consistency according to recipes and the Club's standards.
  • Assist Asian Chef to plan for menus by contributing product ideas with balance of design creativity and cost control.
  • Handle all matters at the barbecue food counter and prepare the daily requisition for all required food items.
  • Maintain portion control and monitor wastage for appropriate adjustment in food preparation
  • Implement effective production schedules and procedures to ensure efficient utilization of manpower and equipment
  • Work with Catering Support Services to ensure that the equipment is maintained in good and sanitary condition
  • Providing support such as cost control reporting in support of tracking of performance against business targets
  • Perform any other related duties as and when assigned by supervisor
  • Achieving sustainable improvements in resource efficiency without compromising product and service quality
  • Proactively mentoring and coaching team members
  • Proactively sourcing new recruits in the market

About You

  • Minimum of 6 years’ relevant experience gaomed in prestigious hotels
  • Strong understanding on the running of the SEA section including the daily operation, cost control and procurement system, HACCP, Work Safety and employee related matters
  • Solid hygiene knowledge in HACCP
  • Able to combine different cuisines to develop new dishes and make continuous improvement on the existing ones
  • Excellent people management skills
  • Good communication skills in Chinese
