The Department
Our Catering Department manages one of the largest and most diverse catering operations in Hong Kong. We provide a wide range of catering, sports and recreation facilities for Members and their guests in three Clubhouses. In addition, both Happy Valley and Sha Tin Racecourses have numerous catering facilities used by Members, non-members and corporate organizations for a variety of functions.
The Job
- Supervise the day-to-day operations of the designated section of pastry, ensuring compliance with all practices, procedures, and standards, aiming to satisfy and exceed guests' expectations.
- Check and control mise en place, ensuring that this is well organized for service the following day.
- Check and control daily mise en place according to the direction of the supervisor.
- Ensure smooth, prompt, and top-class service to guests.
- Assist in making food requisitions in a timely manner.
- Troubleshoot issues that may arise in the kitchen and report any unresolved problems to the supervisor.
- Be responsible for basic on-the-job training, coaching, and development of cooks.
- Be multi-skilled with thorough knowledge of all food outlets of the Club and their menus.
- Taste and examine food prepared, making necessary adjustments and replenishing food when necessary.
- Be responsible for minimizing food wastage.
- Anticipate guests' needs through observation and offer prompt, efficient service either personally or through effective collaboration with colleagues.
- Follow food safety programs and ensure all associates have a working knowledge of the program; assist the Sous Chef in the performance of his/her duties.
- Personally ensure compliance with all relevant Workplace Health and Safety and Occupational Health and Safety rules and regulations.
- Align management style, working practices, and conduct with HKJC values and policies.
- Perform any other related duties as assigned by the supervisor.
About You
You should have:
- A minimum of 4 years' relevant experience gained in prestigious hotels or restaurants
- Experience in all day dining, large-scale coffee shop and banquet food production
- Hygiene knowledge in HACCP
- Effective communication skills in Chinese
- Proficiency in English is an advantage
Terms of employment
The level of appointment will be commensurate with qualifications and experience.
