Senior Manager, Food & Beverage

The Department

Our Catering Department manages one of the largest and most diverse catering operations in Hong Kong. We provide a wide range of catering, sports and recreation facilities for Members and their guests in three Clubhouses. In addition, both Happy Valley and Sha Tin Racecourses have numerous catering facilities used by Members, non-members and corporate organizations for a variety of functions. 

The Job

You will:

  • Optimize F&B service to exceed member expectations by enhancing efficiency, setting standards, allocating resources, training staff, and resolving member-guest issues.
  • Hit revenue and budget targets by setting clear objectives, driving menu, event and marketing initiatives, maximizing income, and enforcing cost discipline.
  • Control expenses and inventory through variance monitoring, corrective actions, and sourcing high-value F&B and FF&E products.
  • Enforce club policies with daily audits of food quality, service, facilities, and safety; deliver focused training and process improvements.
  • Maintain HACCP compliance by monitoring workflows, securing recertification, serving on the HACCP Committee, and collaborating with Food Safety QA.
  • Elevate service by collecting member feedback (MCRM, surveys, mystery shoppers), sharing insights, and tailoring marketing programs.
  • Monitor market trends and recommend innovative F&B products, systems, and techniques.
  • Lead F&B recruitment and succession planning for key roles, management trainees, and part-time staff.
  • Ensure safety by enforcing protocols, auditing facilities, and participating in the divisional safety committee.
  • Advise GMSTCH on member-centric operational needs for new projects, including refurbishments, layouts, and equipment.
  • Deputize for the GMSTCH and carry out additional assignments as delegated

About You

You should have:

  • A degree or higher diploma in Hotel and Catering Management
  • A minimum of 10 years’ experience in renowned hotels or well established catering operations with 5 years in a role of managing multiple outlets
  • Passion for customer service; clear focus on the customer needs and trends in order to meet customer satisfaction; and creativity and flair to exceed customer expectation
  • Sound food and beverage knowledge in Western cuisine, Chinese restaurant experience an advantage, and knowledge of HACCP compliance
  • Strong leadership with excellent communication and interpersonal skills
  • Good insights in market trends
  • Sound knowledge of F & B management and products
  • A solid understanding of F & B trends and experience in organising marketing programs is an advantage
  • Knowledge of HACCP systems is an advantage
  • Proficiency in IT hospitality systems
  • Fluency in both written and spoken English, and Cantonese
  • Proficiency in Mandarin is an advantage
