Founded in 1884, The Hong Kong Jockey Club (“the Club”) is a world-class racing club that acts continuously for the betterment of our society. The Division - Membership & Customer Excellence (MCE)

The Membership and Customer Excellence (MCE) Division is responsible for delivering world-class experiences and deepening engagement across all customer segments. The team oversees operations of clubhouses, racecourses, and Off-Course Betting Branches (OCBBs), while enhancing member and owner value propositions and promoting interest in horse ownership and equestrian sports. It leads the Club’s customer experience strategy across digital and physical touchpoints, ensuring consistency, agility, and excellence. The Division also manages data strategy and governance to build a unified view of customers, enabling more personalised and impactful interactions.

The Department 有關部門

Our Catering Department manages one of the largest and most diverse catering operations in Hong Kong. We provide a wide range of catering, sports and recreation facilities for Members and their guests in three Clubhouses. In addition, both Happy Valley and Sha Tin Racecourses have numerous catering facilities used by Members, non-members and corporate organizations for a variety of functions.

本會飲食部於跑馬地及沙田會所、跑馬地及沙田馬場、和上水雙魚河鄉村會所,為顧客提供多元化及優質餐飲服務,現誠意邀請對餐飲服務有興趣及具備有關工作經驗的人才加入。

The Job 職責內容

  • Be conversant with individual menu items, including basic ingredients, methods of preparation, and presentation style.
  • Maintain kitchen hygiene and cleanliness including pot and dish wash areas, ensuring tools are in good condition and correct storage and stock rotation.
  • Check and control mise en place, ensuring that this is well organized for service the following day.
  • Taste and examine food prepared for freshness and required quality.
  • Set up the section as required by supervisor, ensuring it is checked before service.
  • Be responsible for minimizing food wastage.
  • Attend and comprehend all information discussed at pre-function service briefing sessions.
  • Assist in making food requisitions in a timely manner.
  • Troubleshoot issues that may arise in the kitchen and report any unresolved problems to the supervisor.
  • Be responsible for basic on-the-job training, coaching, and development of cooks.
  • Be punctual, efficient, and courteous, maintaining a professional, pleasing and helpful attitude towards each guest.
  • Comply with all relevant Workplace Health and Safety, Occupational Health and Safety rules and HACCP requirements.
  • Follow the food safety program and ensure all associates have a working knowledge of the program, assisting them in the performance of their duties.
  • Perform any other related duties as assigned by supervisor.

  • 處理製作所有高級宴席及小菜
  • 指導三, 四, 五, 尾鑊砧板營業前準備工作, 市後崗位環境衛生。
  • 監察製作炸雞, 乳鴿, 上皮水及淮鹽等製作。
  • 指揮上雜署理管業時工作, 監察乾貨, 海味發制後貯存量。
  • 指揮打荷日常準備工作, 每天市後清潔衛生要求。
  • 處理本科工具維修柯打, 簽發及追跟。
  • 執行上級分配工作. 向下溝通及執行指令。
  • 執行監督本科員工儀容, 服裝, 紀律及個人衛生。
  • 識別各種菜式成份及配料, 指導下層工作。
  • 協助監察三, 四, 五鑊砧板之出品及半製成品質量, 指導各種菜式製作。
  • 編排每爐頭考勤表, 值勤時間。
  • 巡視每天營業後燃料掣, 水掣, 電掣之關閉。
  • 指揮廚工定期清潔廚房, 保持環境衛生。
  • 視察乾貨倉存量, 開單提取

About You 入職要求

  • Minimum of 3 year relevant experience in hotels or restaurants.
  • 3年或以上於酒店/會所/餐廳餐飲服務經驗
