Chef de Partie (Hilltop Paddock Kitchen)

The Department

Our Catering Department manages one of the largest and most diverse catering operations in Hong Kong. We provide a wide range of catering, sports and recreation facilities for Members and their guests in three Clubhouses. In addition, both Happy Valley and Sha Tin Racecourses have numerous catering facilities used by Members, non-members and corporate organizations for a variety of functions.

The job holder is accountable for providing food of highest quality standards to Members and guests. The job holder is also responsible for the operational readiness of the culinary venues.

The Job

You will:

Check all parts of the kitchen, including pot and dish wash areas for cleanliness, order and correct storage and stock rotation.
Control adequate is en place preparation for next day, sauce, stock, fish etc.
Check and control daily mis en place according to Sous Chef.
Ensure smooth, prompt and top class service to guests.
Assist in making food requisitions.
Responsible for basic on the job training with Cooks
Be multi-skilled with thorough knowledge of all club food venues and menus.
Taste and examine food prepared and make necessary adjustments and replenish food when necessary.
Be responsible for minimising food wastage

About You

You should have:

Minimum of 5 years’ relevant experience in prestigious hotels or restaurants with 2 years in a similar
position
Good knowledge of the latest market trends and contemporary food presentation know-how
Experience in all day dining, large-scale coffee shop and banquet food production
Solid hygiene knowledge in HACCP
Excellent people management practices with good communication skills in English and Chinese
